Barker’s of Geraldine produce their delicious jams at their factory that is nestled at the foot of the Southern Alps in New Zealand’s South Island. Like all their jams, the New Zealand Strawberry Jam by Barkers uses locally sourced fresh fruits because there is simply no substitute for fresh and local fruits. Barkers make their jams gluten free and without the use of preservatives and artificial sweeteners.
Unlike many jam makers, Barkers does not boil their fruits at high temperatures. To prevent the loss of flavours to steam, Barker’s use a vacuum cooker to gently and slowly boil their fruits to lock in flavours and contribute to the unique character of their jams.
